HOT Smoked: The produce is cooked and ready to eat.

COLD Smoked: The produce requires cooking for normal timings.


Anglesey Reared Corn-fed Prime Chicken

Whole chickens and hand sliced chicken breast fillets that are brined until they reach the legally required salt content of 3.5% in the aqueous phase (tested by the Public Analyst) are then allowed to drip before being either COLD or HOT smoked in computer controlled stainless kilns using smoldering local oak chips and sawdust.

The cold smoked chicken requires further cooking similar to ordinary chicken and can be further marinated, oven-baked in foil, pan-fried or BBQ

Smoked Goose Breasts

Free range plump goose breasts either cold or hot smoked.

All produce is blast chilled before being hand sliced and vacuum packed in 100gm increments to the customers requirements

Shelf life for this product is 28 days refrigerated to +2 to +5C or 24 months at -22C

Smoked Anglesey Game

First grade plump fresh game from the islands many shoots are hand prepared and marinated to old local recipes. The resultant tastes are quite astonishing after marinating and cold smoking over the oak shavings.

Although available chilled in vacuum packs during the season, they are also available throughout the year deep frozen.

Pheasants and mallard ducks can either be whole or breast only.

Partridge, pigeon and woodcock are breast only.

Although every care is taken to select well shot birds and subsequent careful inspection, customers must be aware of the possibility of a stray pellet.
